This is definitely a case of adulteration of lentils and may be linked to many health ailments. According to FSSAI, synthetic dyes like Metanil Yellow are used to make pulses look brighter, but this is harmful to health. FSSAI mentioned in the report that consumers should not buy pulses if they smell unpleasant, taste bitter or have grittiness. Legumes should also be avoided if live or dead insects are visible in the product. One should always prefer pulses in packaged form with AGMARK and should also check the FSSAI license number.

For those unfamiliar, metanil yellow is known to be neurotoxic. Long-term exposure can affect the nervous system and may cause memory loss, headaches, behavioral changes and decreased motor coordination. Some also say that Metanil Yellow may increase the risk of cancer. Its metabolites can damage DNA and cause cancer. Long-term ingestion of maytanex can overload the detoxification processes of organs such as the liver and kidneys, leading to liver and kidney damage.
