Global dishes get a local twist at new Assam restaurant | Parami News

t the newest restaurant in Guwahati, global cuisines have taken a different turn.

These include elongated kebabs made from turkey’s minced meat and stuffed with herbs grown in the northeastern part of the country, an inquisitively delicious Assamese tart, spiced layers of paneer into bao and Indian style and saucedin Chinese style.

Roohani, the restaurant opened on 5th Sept Defemcr 2024, has these ‘glocal’ innovations of Nayanjyoti Saikia, Masterchef India Season 7 Winner, aimed at ‘bringing the flavours of the world to the largest urban Centre’ the region has witnessed.

From the Sanskrit Roots, the word ‘Roohani’ can be split into two namely ‘soul’ and ‘essence.’

“A key aspect of our mission is ensuring that our guests’ understanding of our name comes to reality. Roohani intends to provide an extraordinary dining experience with global cuisines coupled with traditional Indian and more modern ingredients to take soaring food lovers on a holy journey,” Mr Saikia explained.

He stated that he has put the dishes on the menu in a way to bring out the assortment of local cuisine as well as exotic ones from other countries. For example, a delicious fruit tart underneath is complemented with a savory sweet filling capped off with a coconut ice-cream layer.

“Certain items were placed on the menu, which I thought is sprawled with innovative ideas on my part. We have also inserted local service to common dishes like Turkish kebabs,” he said.

“We also have something called Bumble Bee, which is a rich wild honey frozen parfait with crumbly almond sable drizzled honey caramel. Locally grown Roselle flower has been incorporated in the sorbets and syrups,” said Mr. Saikia, who explained the reason for the launch on September 5, 2023, is that he joined MasterChef India on this day.
